Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes clean and prick each with a fork. Roast directly on oven rack or on a foil-lined baking sheet for 45-60 minutes until tender. Let cool 15 minutes, then peel and mash until smooth.
  2. Reduce oven temperature to 350°F (175°C). To the mashed sweet potatoes, add melted butter, brown sugar, beaten eggs, milk, vanilla, cinnamon, nutmeg, and salt. Stir until well combined and smooth.
  3. In a medium bowl, whisk together flour, brown sugar, cinnamon, and salt. Add cold butter cubes and cut in with a pastry cutter or two forks until mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in chopped pecans.
  4. Grease a 9×13-inch baking dish. Spread sweet potato mixture evenly into dish. Sprinkle pecan streusel evenly over the top without pressing down.
  5. Bake at 350°F (175°C) for 30-35 minutes until streusel is golden brown and mixture bubbles at edges. If topping browns too quickly, tent loosely with foil for last 10 minutes. Let rest 10 minutes before serving.
