Ingredients

Scale
  • 1 (15 oz) can pumpkin puree
  • 1 (12 oz) can evaporated milk
  • 2 large eggs, room temperature
  • 1/2 cup pure maple syrup
  • 1/4 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 (15.25 oz) box yellow cake mix
  • 1 cup chopped pecans
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, whisk together pumpkin puree, evaporated milk, eggs, maple syrup, granulated sugar, pumpkin pie spice, vanilla extract, and salt until smooth and creamy.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly.
  4. Sprinkle the entire box of yellow cake mix evenly over the pumpkin base. Do not stir.
  5. Sprinkle chopped pecans and ground cinnamon evenly over the cake mix.
  6. Drizzle melted butter evenly over the entire surface, covering as much of the dry cake mix as possible.
  7. Bake for 45-50 minutes, until the top is golden brown and the edges are bubbly. The center may still look slightly jiggly.
  8. Let cool on a wire rack for at least 15-20 minutes before serving. Serve warm.

Notes

For best results, use room temperature ingredients. Do not overmix the pumpkin base. Let the cake rest for 20 minutes before serving to allow the pumpkin layer to set. For a gluten-free version, use a gluten-free yellow cake mix. For a dairy-free version, use melted coconut oil or plant-based butter and full-fat canned coconut milk instead of evaporated milk.
