Turn leftover bubbly into festive, wobbly champagne jello shots that are perfect for New Year’s Eve parties. These elegant, easy-to-make treats combine real champagne with a touch of vodka for a sophisticated twist on a classic party favorite.

Ingredients

Scale
  • 2 cups (480 ml) Champagne or Sparkling Wine (brut or extra-dry prosecco recommended)
  • 3 tablespoons (about 4 packets) Unflavored Gelatin (Knox brand recommended)
  • 1/3 cup (65 grams) Granulated Sugar
  • 1/2 cup (120 ml) Cold Water
  • 1/4 cup (60 ml) Vodka or Your Favorite Liquor (optional, for a stronger kick)
  • Optional Garnishes: Fresh Raspberries, Edible Flowers, or Pomegranate Seeds

Instructions

  1. Bloom the Gelatin: Pour 1/2 cup cold water into a small saucepan. Sprinkle 3 tablespoons unflavored gelatin evenly over the surface. Let sit for 5 minutes without stirring until it becomes a thick, spongy mass.
  2. Heat the Gelatin Mixture: Place the saucepan over low heat. Whisk constantly until the gelatin dissolves completely and the liquid is clear (about 2-3 minutes). Do not boil.
  3. Dissolve the Sugar: Add 1/3 cup granulated sugar and whisk continuously until fully dissolved (about 1 minute). The mixture should look clear and slightly syrupy.
  4. Add the Champagne: Remove from heat and let cool for 2 minutes. Slowly pour in 2 cups of champagne while whisking gently. Pour slowly to minimize foam.
  5. Add the Liquor: Pour in 1/4 cup vodka (or chosen liquor) and whisk to combine.
  6. Fill the Cups: Arrange shot glasses or small cups on a baking sheet. Add optional garnishes (raspberries, pomegranate seeds) to each cup. Carefully pour the champagne mixture into each cup, filling about 3/4 full.
  7. Chill Until Set: Cover the baking sheet with plastic wrap or lids. Refrigerate for at least 4-6 hours, preferably overnight, until firm.
  8. Serve: Remove from fridge. Serve directly in cups or gently unmold onto a platter. Garnish with mint or extra raspberries if desired.

Notes

Let champagne sit out for 30 minutes to reduce carbonation before using. Do not exceed 1/4 cup of alcohol or shots won’t set properly. For best results, make the night before and chill overnight. Shots keep for up to 3 days in the refrigerator. Do not freeze.
