Ingredients

Scale
  • 2 cups (180g) rolled oats
  • 1 cup (245g) pumpkin puree (100% pure, not pie filling)
  • 1 ½ cups (360ml) milk of choice (whole milk or oat milk recommended)
  • ½ cup (120g) plain Greek yogurt
  • 3 tablespoons (60ml) pure maple syrup
  • 2 tablespoons (20g) chia seeds
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • Pinch of fine sea salt
  • Optional toppings: chopped pecans or walnuts, pumpkin seeds (pepitas), extra Greek yogurt or whipped cream, extra maple syrup, ground cinnamon or pumpkin pie spice

Instructions

  1. In a medium mixing bowl, combine the rolled oats, chia seeds, cinnamon, ginger, nutmeg, cloves, and salt. Stir to distribute evenly.
  2. In a separate bowl or large liquid measuring cup, whisk together the pumpkin puree, milk, Greek yogurt, and maple syrup until smooth and fully incorporated.
  3. Pour the wet mixture into the dry ingredients. Stir gently with a rubber spatula until everything is combined and no dry patches remain.
  4. Divide the mixture evenly among 4-6 mason jars or airtight containers (8-ounce size), filling about three-quarters full. Tap each jar gently on the counter to settle the mixture.
  5. Seal the jars tightly and refrigerate for at least 4 hours, preferably overnight (up to 4 days).
  6. Before serving, stir each jar. If too thick, add a splash of milk. Add desired toppings such as chopped nuts, pumpkin seeds, a dollop of yogurt or whipped cream, and a sprinkle of cinnamon.
  7. Serve cold or at room temperature. For warm oats, microwave for 30-45 seconds, stirring halfway.

Notes

For best flavor, make a day ahead. Toasting the oats at 350°F for 8-10 minutes before mixing adds a nutty depth. If oats turn out too thick, stir in a splash of milk. For a smoother texture, blend half the mixture before adding to jars.
