This bright cranberry orange sauce with fresh ginger is tangy, sweet, and has a little warmth from the ginger that sneaks up on you. It’s everything you want from a holiday condiment, coming together in just 15 minutes.

Ingredients

Scale
  • 12 ounces (340 grams) fresh or frozen cranberries
  • ¾ cup (150 grams) granulated sugar
  • ½ cup (120 ml) fresh orange juice (from about 2 medium oranges)
  • 1 tablespoon fresh orange zest
  • 1 tablespoon fresh ginger, finely grated
  • ¼ cup (60 ml) water
  • Pinch of salt

Instructions

  1. Prepare your ingredients: Rinse the cranberries and pick out any soft or shriveled ones. Zest the oranges before juicing them. Grate the ginger. Measure out the sugar, water, and orange juice.
  2. In a medium saucepan, combine the orange juice, water, and sugar. Stir over medium heat until the sugar dissolves, about 2 minutes.
  3. Add the cranberries and grated fresh ginger to the saucepan. Stir to combine.
  4. Increase heat to medium-high and bring the mixture to a boil. Cook until the cranberries start to pop and soften, about 3 to 4 minutes.
  5. Reduce heat to low and let the sauce simmer gently for 8 to 10 minutes, stirring occasionally, until the cranberries have burst and the sauce has thickened.
  6. Stir in the orange zest during the last minute of cooking.
  7. Remove the saucepan from heat. Let the sauce cool for about 10 minutes; it will continue to thicken as it cools.
  8. Stir in a tiny pinch of salt. Taste and adjust sweetness if needed by adding another tablespoon of sugar while still warm.
  9. Transfer to a serving bowl or storage container. Let cool completely before refrigerating if not serving immediately.

Notes

For a spiced version, add a cinnamon stick and star anise pod while simmering. For a maple version, replace sugar with ½ cup maple syrup and reduce water to 2 tablespoons. The sauce can be made ahead and tastes even better the next day. Store in refrigerator for up to 2 weeks or freeze for up to 3 months.
