Ingredients

Scale
  • 3 medium ripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, browned
  • 3/4 cup (150g) packed brown sugar
  • 1 1/2 cups (190g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon espresso powder (for glaze)
  • 1 cup (120g) powdered sugar (for glaze)
  • 23 tablespoons whole milk or cream (for glaze, use dairy-free milk if needed)

Instructions

  1. Brown the Butter: In a medium saucepan over medium heat, melt the unsalted butter. Stir frequently as it foams and then begins to turn golden brown and smell nutty, about 5-7 minutes. Pour into a heatproof bowl to cool slightly.
  2. Mix Dry Ingredients: In a separate bowl, sift together the flour, baking soda, and salt. Set aside.
  3. Prepare Wet Ingredients: In a large mixing bowl, mash the bananas until smooth but slightly chunky. Add brown sugar and stir to combine. Add eggs, vanilla extract, and cooled browned butter. Mix gently until combined.
  4. Combine Wet and Dry: Gradually fold the dry ingredients into the wet mixture using a spatula. Stop when no flour streaks remain; do not overmix.
  5. Preheat Oven and Prepare Pan: Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  6. Pour Batter and Bake: Transfer batter to the loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if top browns too quickly.
  7. Cool: Let bread cool in pan for 15 minutes, then transfer to a wire rack to cool completely before glazing.
  8. Make Espresso Glaze: Whisk together powdered sugar, espresso powder, and milk or cream until smooth and pourable. Adjust milk for desired thickness.
  9. Glaze and Serve: Drizzle glaze evenly over cooled loaf. Let set for 10-15 minutes before slicing.

Notes

Be attentive when browning butter to avoid burning. Fold dry ingredients gently to prevent tough bread. Cool bread completely before glazing to ensure glaze sets properly. Tent bread with foil if browning too fast. For gluten-free option, substitute flour with gluten-free baking blend. For dairy-free, use browned coconut oil and plant-based milk.
