Ingredients

Scale
  • 2 lbs (about 900g) chicken wings, separated into drumettes and flats
  • 1 tablespoon (15ml) baking powder
  • 1 teaspoon (5g) kosher salt
  • 1/2 teaspoon (2g) garlic powder
  • 1/2 teaspoon (2g) onion powder
  • 1/4 teaspoon (1g) black pepper
  • 1/2 cup (120ml) hot sauce (e.g., Frank’s RedHot)
  • 1/4 cup (60g) unsalted butter, melted
  • 1 tablespoon (15ml) apple cider vinegar
  • 1/2 teaspoon (2g) Worcestershire sauce

Instructions

  1. Parboil the Wings (10 minutes): Place separated wings in a large pot and cover with cold water. Bring to a boil over high heat. Once boiling, cook for exactly 7 minutes.
  2. Dry, Dry, Dry (5 minutes): Drain wings in a colander and let cool slightly. Pat each wing completely dry with paper towels.
  3. Season the Wings (5 minutes): In a large bowl, whisk together baking powder, salt, garlic powder, onion powder, and black pepper. Add dried wings and toss to coat evenly.
  4. Preheat the Air Fryer (3 minutes): Set air fryer to 400°F (200°C) and preheat for 3 minutes.
  5. Air Fry the Wings (20-22 minutes): Place wings in air fryer basket in a single layer. Air fry at 400°F (200°C) for 10 minutes. Shake or flip wings, then cook for another 10-12 minutes until deep golden brown and crispy (internal temp 165°F/74°C).
  6. Make the Sauce (5 minutes): While wings cook, melt butter in a small saucepan over low heat. Whisk in hot sauce, apple cider vinegar, and Worcestershire sauce until smooth. Keep warm.
  7. Toss and Serve (2 minutes): Transfer cooked wings to a clean large bowl. Pour warm sauce over them and toss gently to coat. Serve immediately.

Notes

For extra crispy skin, after tossing in sauce, return wings to air fryer for 2 minutes at 400°F. Store leftover wings and sauce separately to prevent sogginess. Reheat in air fryer at 375°F for 3-4 minutes.
