Learn how to make stunning chocolate-dipped strawberry roses that look like they came from a high-end patisserie. With just a few simple ingredients and a special dipping technique, you can create these beautiful, edible works of art for Valentine’s Day or any romantic occasion.

Ingredients

Scale
  • 1 pound fresh strawberries (about 12–16 large berries)
  • 8 ounces high-quality dark or semi-sweet chocolate (about 225 grams)
  • 1 teaspoon coconut oil or vegetable shortening
  • Optional: flaky sea salt, crushed pistachios, freeze-dried strawberry powder, or white chocolate for decoration

Instructions

  1. Prepare the Strawberries: Gently wash the strawberries under cool running water. Do not soak them. Pat them completely dry with paper towels or a clean kitchen towel. Let them sit on a paper towel-lined plate for 15-20 minutes to ensure they are 100% dry. They must be at room temperature.
  2. Chop the Chocolate: Using a sharp knife, chop the chocolate into small, even pieces about the size of a pea. Place the chopped chocolate in your heatproof bowl.
  3. Set Up the Double Boiler: Fill the saucepan with about an inch of water. Bring it to a gentle simmer over medium heat. Do not let the water touch the bottom of the bowl. Place the bowl with the chocolate over the simmering water.
  4. Melt the Chocolate: Stir the chocolate gently with your rubber spatula as it melts. Once the chocolate is about 75% melted, remove the bowl from the heat and continue stirring. Stir in the teaspoon of coconut oil until the mixture is smooth, glossy, and completely fluid.
  5. Test the Chocolate: Dip the tip of a clean finger into the chocolate. It should coat your finger smoothly and feel like a thick, warm syrup. If it is too thick, add another tiny drop of coconut oil. If it is too thin, let it cool for a moment while stirring.
  6. Form the Rose Petals: Hold a dry strawberry by the green leaves. Gently dip the bottom half of the strawberry into the melted chocolate. Lift it out and let the excess chocolate drip back into the bowl for a few seconds. Gently press the dipped bottom of the strawberry against the side of the bowl to create a slight flat edge. Then, using a gentle, swirling motion, rotate the strawberry as you lift it out of the chocolate to form overlapping petals.
  7. Set the Strawberry: Place the dipped strawberry on the parchment-lined baking sheet, resting it on its bottom so the rose shape stands upright. Repeat with the remaining strawberries, working one at a time.
  8. Add Optional Decorations: While the chocolate is still wet, sprinkle on flaky sea salt, crushed nuts, or any other toppings. If you want a white chocolate drizzle, wait until the dark chocolate has fully set (about 30 minutes), then drizzle with melted white chocolate.
  9. Let Them Set Completely: Allow the strawberry roses to set at room temperature for at least 1 hour. Do not put them in the refrigerator unless absolutely necessary.

Notes

Water is the enemy of melted chocolate – ensure all equipment and strawberries are completely dry. Do not overheat the chocolate; use gentle heat and let residual heat finish melting. Work quickly but gently as chocolate starts setting immediately. Room temperature strawberries are key for smooth chocolate coating. These are best enjoyed within 24 hours.
