Classic Cherry Coke Salad

A nostalgic, easy-to-make retro dessert combining cherry soda, Jell-O, whipped topping, and marshmallows for a light, bubbly, and sweet treat perfect for cozy gatherings.

  • 12 fl oz (355 ml) cherry soda (preferably Coca-Cola Cherry)
  • 1 cup (50 g) mini marshmallows
  • 1/2 cup (75 g) maraschino cherries, drained and chopped (reserve some whole for garnish)
  • 8 oz (227 g) whipped topping, thawed
  • 3 oz (85 g) cherry Jell-O powder
  • 1/2 cup (125 g) crushed pineapple, drained
  • 1/4 cup (30 g) chopped pecans or walnuts (optional)

Instructions

  1. Chill your cherry soda in the refrigerator until cold.
  2. In a large mixing bowl, combine cherry Jell-O powder and chilled cherry soda. Stir gently until the powder dissolves completely, about 2-3 minutes, allowing the soda to foam.
  3. Drain crushed pineapple well, then fold it into the soda mixture along with mini marshmallows. Mix gently for about 2 minutes.
  4. Gently fold in the thawed whipped topping using a spatula, being careful not to overmix to keep the salad light and airy.
  5. Drain and chop maraschino cherries, then fold them in along with chopped nuts if using.
  6. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably 4, to allow the salad to set and flavors to meld.
  7. Before serving, stir gently once and garnish with whole maraschino cherries.

Notes

Drain pineapple thoroughly to avoid sogginess. Fold whipped topping gently to maintain light texture. Chill for at least 2 hours for best results. For dairy-free option, substitute whipped topping with coconut whipped cream. Avoid using diet soda for best flavor and texture.
