Delicate and elegant finger sandwiches perfect for tea parties and elegant gatherings, featuring classic fillings like cucumber, egg salad, and smoked salmon.

Ingredients

  • White sandwich bread, crusts removed (soft and fresh; Parker House style works beautifully)
  • Unsalted butter, softened
  • Cucumber, peeled and thinly sliced
  • Fresh dill, finely chopped
  • Cream cheese, softened
  • Eggs, hard-boiled and chopped
  • Mayonnaise
  • Dijon mustard (optional)
  • Smoked salmon, thinly sliced
  • Fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or chives, chopped

Instructions

  1. Prepare the bread: Lay out sandwich bread slices and carefully trim off the crusts with a serrated knife. If bread is stale, lightly press or warm it under a damp towel for a few minutes to soften. Spread a thin layer of softened butter on each slice to keep moisture locked in and prevent sogginess. (Approx. 5 minutes)
  2. Make cucumber filling: In a bowl, combine cream cheese, finely chopped dill, a squeeze of fresh lemon juice, salt, and pepper. Thinly slice cucumbers and, if preferred, place them in a sieve to drain for 10 minutes before adding. Spread the cream cheese mixture evenly on buttered bread, then layer cucumber slices. (Approx. 10 minutes)
  3. Prepare egg salad filling: Chop hard-boiled eggs finely. Mix with mayonnaise, a touch of Dijon mustard, salt, pepper, and finely chopped chives or parsley. Adjust mayo for creamy but not runny texture. Spread generously over buttered bread slices. (Approx. 10 minutes)
  4. Assemble smoked salmon sandwiches: On buttered bread, spread a thin layer of cream cheese mixed with lemon zest and a pinch of black pepper. Layer thin slices of smoked salmon and garnish with fresh dill or parsley. (Approx. 5 minutes)
  5. Cut and arrange: Stack sandwiches and cut each into small rectangles or classic triangles. Arrange neatly on a serving platter, alternating fillings for visual appeal. Garnish with a sprig of fresh herbs. (Approx. 5 minutes)

Notes

Use softened butter to prevent bread tearing and sogginess. Assemble sandwiches no more than an hour before serving or refrigerate tightly wrapped for up to 24 hours. Bring to room temperature before serving for best flavor. Variations include vegetarian fillings, low-carb lettuce wrap option, and adding horseradish for spice.
