A quick and easy crack chicken casserole featuring shredded chicken, ranch seasoning, crispy bacon, and melted cheddar cheese for a creamy, comforting meal perfect for busy weeknights or cozy dinners.

  • 3 cups (450g) shredded cooked chicken (rotisserie chicken recommended)
  • 6 slices bacon, cooked crisp and chopped
  • 1 packet (1 oz / 28g) ranch seasoning mix
  • 8 oz (225g) cream cheese, softened
  • 1 cup (240g) sour cream
  • 2 cups (200g) shredded cheddar cheese
  • 23 stalks green onions, chopped (optional)
  • 1 tsp garlic powder (optional)
  • Freshly ground black pepper, to taste
  • Optional add-ins: diced jalapeños, cooked mushrooms

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a cold skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and chop into bite-sized pieces.
  3. In a medium bowl, combine shredded cooked chicken, softened cream cheese, sour cream, ranch seasoning, garlic powder (if using), and black pepper. Stir until smooth and creamy.
  4. Fold in 1 cup (100g) shredded cheddar cheese and half of the chopped bacon, mixing just enough to distribute evenly.
  5. Spread the mixture evenly in a 9×13-inch (23×33 cm) casserole dish.
  6. Top with the remaining 1 cup (100g) shredded cheddar cheese and the rest of the bacon.
  7. Bake for 25-30 minutes, or until bubbly and golden around the edges. The cheese should be melted and slightly browned.
  8. Remove from oven and sprinkle chopped green onions on top. Let rest for 5 minutes before serving.

Notes

Soften cream cheese before mixing to avoid clumps. Cook bacon slowly for best texture and flavor. Use pre-cooked rotisserie chicken to save time. Tent casserole with foil if cheese browns too quickly. Let casserole rest 5 minutes before serving for easier slicing.
