These cozy 5-ingredient peanut butter cookies are soft, chewy, and incredibly easy to make. With just a handful of pantry staples, you can have warm, delicious cookies in under 20 minutes.

Ingredients

Scale
  • 1 cup (240g) creamy peanut butter (e.g., Skippy or Jif)
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (5g) baking soda

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine peanut butter, sugar, egg, and vanilla extract. Stir until well combined.
  3. Sprinkle baking soda over the mixture and stir until fully incorporated.
  4. Scoop tablespoon-sized portions of dough and roll into balls. Place on prepared baking sheet, spacing 2 inches apart.
  5. Dip a fork in granulated sugar and press down gently on each dough ball to create a crisscross pattern.
  6. Bake for 10-12 minutes, until edges are golden and centers are soft.
  7. Let cookies rest on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use commercial peanut butter like Skippy or Jif. Natural peanut butter may cause the cookies to spread too much. If dough is too dry, add 1 teaspoon of milk or water. If too wet, add 1 tablespoon of flour or extra sugar. Let cookies cool on the baking sheet for 5 minutes before moving.
