These Cozy Apple Cider Donut Muffins feature a tender crumb and a sweet, crispy cinnamon sugar crust that mimics classic cider donuts. Made with simple pantry staples and apple cider, they are perfect for cozy mornings or surprise guests.

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional but recommended)
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (6 fl oz / 180ml) apple cider (fresh or store-bought, natural unsweetened)
  • 1/3 cup (2.7 fl oz / 80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Cinnamon sugar topping:
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well to prevent sticking.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In a separate bowl, whisk together the apple cider, vegetable oil, granulated sugar, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and gently stir with a spatula just until combined. Some lumps are okay; do not overmix.
  5. Spoon the batter evenly into the prepared muffin cups, filling each about 3/4 full.
  6. In a small bowl, mix the granulated sugar and ground cinnamon for the topping. Sprinkle this mixture generously over the tops of each muffin.
  7. Bake for 18-22 minutes, starting to check at 18 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  8. Remove muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use room temperature eggs for better consistency. For a stronger cinnamon sugar crust, brush muffins with melted butter after baking and toss in fresh cinnamon sugar. Muffins can be stored at room temperature for 2 days or frozen for up to 3 months.
