These cozy bacon-wrapped jalapeño popper bites are warm, indulgent, and perfect for game days, lazy Sundays, or any gathering. With a creamy cheese filling and crispy bacon, they’re a crowd-pleasing appetizer that comes together in about 30 minutes.

  • 12 medium fresh jalapeño peppers
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 teaspoon garlic powder
  • 12 slices thin-cut bacon
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack on a rimmed baking sheet if using.
  2. Cut each jalapeño in half lengthwise. Use a small spoon to scrape out the seeds and white membranes.
  3. In a small mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, and a pinch of salt. Stir until smooth and well combined.
  4. Spoon about a teaspoon of the cream cheese mixture into each jalapeño half. Do not overfill.
  5. Par-cook the bacon: Place bacon slices on a microwave-safe plate lined with paper towels. Microwave for about 2 minutes, until just starting to cook but still flexible. Alternatively, cook in a skillet over medium heat for 2-3 minutes per side.
  6. Cut each bacon slice in half crosswise. Wrap one half-slice around each filled jalapeño half, overlapping the ends slightly on the bottom.
  7. Place the wrapped peppers seam-side down on the wire rack or baking sheet, leaving space between each.
  8. Bake for 20-25 minutes, until bacon is crispy and golden brown and filling is bubbly. Start checking at 18 minutes.
  9. Let the peppers rest on the baking sheet for about 5 minutes before serving.

Notes

Par-cook the bacon first for crispy results. Dry peppers thoroughly after washing to avoid soggy bacon. Use a wire rack to allow fat to drip away. For milder bites, remove all seeds and membranes. Let rest 5 minutes before serving to avoid burning. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven or air fryer for best texture.
