This cozy banana walnut bread is incredibly moist, made with ripe bananas and toasted walnuts, and requires no mixer. It’s a simple, foolproof recipe that fills your home with the warm aroma of cinnamon and caramelized bananas.

Ingredients

Scale
  • 3 large ripe bananas, mashed (about 1 ½ cups or 340g)
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (60g) walnut halves, roughly chopped and toasted

Instructions

  1. Preheat your oven to 350°F (175°C) and position a rack in the center. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides for easy removal. Or just grease it well with butter.
  2. Toast the walnuts while the oven heats up. Spread the chopped walnuts on a small baking sheet and toast for 5-7 minutes, until they smell fragrant and look slightly darker. Set aside to cool.
  3. Mash the bananas in a large mixing bowl using a fork or potato masher. You want them mostly smooth with a few small lumps for texture—about 1 ½ cups total.
  4. Add the melted butter to the mashed bananas and stir until combined. Stir in the granulated sugar, then crack in the egg and add the vanilla extract. Mix until everything is smooth and glossy.
  5. In a separate small bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  6. Pour the dry ingredients into the wet mixture. Use a wooden spoon or spatula to fold everything together gently. Stir just until no streaks of flour remain—overmixing will make the bread tough.
  7. Fold in the toasted walnuts with a few gentle strokes. Reserve a small handful to sprinkle on top for a pretty finish.
  8. Scrape the batter into your prepared loaf pan and spread it evenly. Sprinkle the reserved walnuts on top, pressing them lightly into the batter so they stick.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly after 40 minutes, tent the pan loosely with foil.
  10. Let the bread cool in the pan on a wire rack for 15 minutes. Then use the parchment paper to lift it out and transfer it to the rack to cool completely—about 2 hours.

Notes

For best results, use very ripe bananas (almost black). Don’t overmix the batter. Toast walnuts for enhanced flavor. Let bread cool completely before slicing for clean slices. Bread tastes even better the next day.
