Ingredients

Scale
  • 67 medium fresh peaches, peeled and sliced
  • 1/2 cup (115 grams) unsalted butter
  • 1 cup (120 grams) all-purpose flour
  • 3/4 cup (150 grams) granulated sugar
  • 1/3 cup (70 grams) brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120 ml) milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • Vanilla ice cream for serving

Instructions

  1. Peel and slice 6-7 medium peaches. Toss them in a bowl with 3/4 cup granulated sugar, 1 tablespoon lemon juice, and 1/2 teaspoon ground cinnamon if using. Set aside to macerate for about 15 minutes.
  2. Melt 1/2 cup unsalted butter in a medium skillet over medium heat. Stir frequently as it foams and turns golden brown with a nutty aroma, about 5-7 minutes. Remove from heat and let cool slightly.
  3. Preheat oven to 350°F (175°C).
  4. In a mixing bowl, combine 1 cup all-purpose flour, 1/3 cup brown sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt. Stir well.
  5. Add 1/2 cup milk, 1 teaspoon vanilla extract, and the cooled brown butter to the dry ingredients. Mix gently until just combined; the batter will be slightly thick and moist.
  6. Pour the peach mixture (including juices) into a greased 9×9-inch baking dish. Spoon the batter over the peaches in dollops, spreading gently but not fully covering the fruit.
  7. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and peaches are bubbly. If the crust browns too quickly, tent loosely with foil after 25 minutes.
  8. Let the cobbler cool for about 10 minutes before serving to allow juices to thicken.
  9. Serve warm with a generous scoop of vanilla ice cream on top.
