  • 1 teaspoon apple cider vinegar
  • 1 cup mashed potatoes, cooled
  • 2 tablespoons butter, softened
  • 2 tablespoons milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin lightly with butter or non-stick spray.
  2. In a bowl, combine cooled mashed potatoes with softened butter and milk. Season with salt and pepper. Stir until creamy but thick enough to hold shape. Set aside.
  3. In a large bowl, mix ground beef, diced onion, breadcrumbs, egg, minced garlic, milk, Worcestershire sauce, salt, pepper, and smoked paprika gently but thoroughly.
  4. Using a spoon or small ice cream scoop, fill each muffin cup about halfway with the meat mixture and press lightly to create a flat base.
  5. Add a dollop of mashed potatoes on top of each meat portion. Swirl the potatoes gently into the meat to create a marbled effect.
  6. Cover the mashed potato swirls with the remaining meat mixture, pressing gently to level off the tops.
  7. Whisk together brown sugar, ketchup, Dijon mustard, and apple cider vinegar in a small bowl until smooth.
  8. Brush the glaze generously over the top of each muffin.
  9. Bake for 30-35 minutes until the meat is cooked through (internal temperature 160°F/71°C) and the glaze is bubbly and caramelized.
  10. Let rest for 5 minutes before removing from the pan.

Notes

Do not overmix the meat to keep it tender. Use cooled mashed potatoes to maintain swirl shape. Brush glaze evenly and consider applying two coats for best caramelization. Tent with foil if glaze browns too quickly. Use a meat thermometer to ensure proper cooking.
