Ingredients

  • Brie cheese (8 oz wheel)
  • Aged cheddar (6-8 oz)
  • Goat cheese log (4 oz)
  • Prosciutto (4-6 oz)
  • Salami (4-6 oz)
  • Soppressata (4 oz, optional)
  • Fresh cranberries (1 cup)
  • Dried cranberries (1/2 cup)
  • Honey (1/4 cup)
  • Fig jam or cranberry chutney (1/2 cup)
  • Apple slices (1 apple, thinly sliced)
  • Fresh rosemary sprigs (4-5 sprigs)
  • Mixed nuts (1 cup, toasted pecans and almonds)
  • Assorted crackers (about 8 oz)
  • Baguette slices (1 small baguette, thinly sliced and toasted)
  • Extra fresh rosemary sprigs (for garnish)
  • Extra fresh cranberries (for garnish)
  • Edible flowers or pomegranate seeds (optional, for garnish)

Instructions

  1. Prep your ingredients (10 minutes): Take brie and goat cheese out of fridge 20 minutes before assembling. Slice baguette into thin rounds and toast at 350°F for 5 minutes. Slice apple thinly and toss with lemon juice. Rinse and dry fresh cranberries and rosemary sprigs.
  2. Place your cheeses first (2 minutes): Put brie wheel in center-left of board. Place goat cheese log opposite it, and wedge of cheddar in between. Ensure space around each cheese for cutting.
  3. Add the meats (3 minutes): Fold prosciutto into loose ribbons and arrange in a small pile near one edge. Layer salami slices in slightly overlapping pattern. If using soppressata, place on opposite side.
  4. Fill in with fruits and spreads (3 minutes): Spoon fig jam or cranberry chutney into a small bowl near brie. Drizzle honey over brie and goat cheese. Scatter fresh and dried cranberries in small clusters. Tuck apple slices between cheese wedges.
  5. Add the crunchy elements (2 minutes): Fill another small bowl with toasted nuts and place near cheddar. Arrange crackers and baguette slices in small groups around board, fanning them out slightly.
  6. Garnish with rosemary (1 minute): Tuck fresh rosemary sprigs between cheese and meats. Add extra fresh cranberries on top for pops of red.
  7. Final check and serve (1 minute): Fill any empty spots with extra crackers or nuts. Serve immediately, or cover with plastic wrap and refrigerate for up to 2 hours (take out 20 minutes before serving).

Notes

Don’t overthink the arrangement. Wash and dry cranberries thoroughly to avoid soggy crackers. Toast nuts yourself for best flavor. Keep brie whole until serving. Room temperature cheese is essential. Always put out extra napkins.
