Ingredients

Scale
  • 12 oz fresh or frozen cranberries (about 3 cups)
  • 1/2 cup maple syrup
  • 1/4 cup orange juice
  • Zest of 1 large orange
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt
  • 1 wheel of brie (8–10 oz)
  • 1 tablespoon honey
  • 1 tablespoon chopped pecans or walnuts
  • Fresh rosemary sprigs
  • 1 baguette, sliced into 1/2-inch rounds and toasted (about 20–25 slices)
  • 1/2 cup candied pecans or walnuts
  • 1/2 cup dried figs or apricots
  • 1/2 cup fresh apple slices
  • 1/4 cup fresh pomegranate seeds
  • Assorted crackers (about 10-15)
  • Fresh herbs for garnish (rosemary sprigs, fresh thyme, or sage leaves)

Instructions

  1. Make the Cranberry Orange Compote: In a small saucepan, combine cranberries, maple syrup, orange juice, orange zest, cinnamon, and a pinch of salt. Bring to a gentle boil over medium-high heat, then reduce heat to low. Simmer for 8-10 minutes, stirring occasionally, until most cranberries have burst and mixture has thickened slightly. Remove from heat and stir in vanilla extract. Let cool.
  2. Toast the Baguette Slices: Preheat oven to 375°F (190°C). Slice baguette into 1/2-inch rounds and arrange in a single layer on a parchment-lined baking sheet. Lightly brush or spray with olive oil. Toast for 5-7 minutes, flipping halfway through, until golden and crispy. Let cool.
  3. Bake the Brie: Reduce oven temperature to 350°F (175°C). Place brie wheel on a small piece of parchment paper on a baking sheet. Score the top in a crosshatch pattern with shallow cuts about 1/4 inch deep. Drizzle honey over the top and sprinkle with chopped pecans. Bake for 8-10 minutes until soft and slightly puffed. Let rest for 2-3 minutes before transferring to the board.
  4. Assemble the Board: Place warm brie wheel in the center of a serving board, slightly off to one side. Put cranberry orange compote in a small bowl or ramekin next to the brie. Arrange toasted baguette slices and crackers around the cheese and compote in small clusters. Scatter candied pecans, dried figs or apricots, and fresh apple slices in empty spaces. Sprinkle pomegranate seeds over everything. Tuck fresh rosemary and thyme sprigs between ingredients.
  5. Serve Immediately: Place a cheese knife next to the brie. Encourage guests to pile brie, compote, and a candied pecan onto a baguette slice. Enjoy while the brie is warm and gooey.

Notes

Make the compote up to 3 days ahead for deeper flavor. Toast baguette slices a day in advance and store in an airtight container. Let brie sit at room temperature for 15-20 minutes before baking for best melting. Don’t skip scoring the brie. For a vegan option, use vegan brie and maple syrup instead of honey. For gluten-free, use gluten-free crackers or cucumber slices.
