Ingredients

Scale
  • 1 ½ pounds boneless, skinless chicken breasts (about 3 medium breasts)
  • 4 cups low-sodium chicken broth
  • 2 (10.5 oz) cans cream of chicken soup
  • 1 cup heavy cream
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 large carrots, peeled and sliced (about 1 ½ cups)
  • 3 celery stalks, sliced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 bay leaf
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (optional)
  • 1 cup whole milk
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Prep the vegetables: Dice the onion, slice the carrots and celery, and mince the garlic. Toss them into the crockpot.
  2. Add the chicken and seasonings: Place the chicken breasts on top of the vegetables. Sprinkle with thyme, parsley, pepper, and salt. Drop in the bay leaf.
  3. Make the broth: In a medium bowl, whisk together the cream of chicken soup, chicken broth, and heavy cream until smooth. Pour this mixture over the chicken and vegetables.
  4. Cook on low: Cover and cook on LOW for 6-7 hours, or on HIGH for 3-4 hours, until the chicken shreds easily with a fork.
  5. Shred the chicken: Remove the chicken breasts with tongs and shred with two forks. Discard the bay leaf. Return the shredded chicken to the crockpot and stir gently.
  6. Make the dumpling dough: In a large bowl, whisk together the flour, baking powder, salt, and garlic powder. Make a well in the center. Pour in the milk and melted butter. Stir until just combined (a soft, slightly sticky dough). Do not overmix.
  7. Drop the dumplings: Using a cookie scoop or two spoons, drop rounded spoonfuls of dough onto the hot broth. Space them out slightly. You should get about 12-14 dumplings.
  8. Cook the dumplings: Cover the crockpot and cook on HIGH for 45 minutes to 1 hour. Do NOT lift the lid during this time. Dumplings are done when a toothpick inserted into the center comes out clean.
  9. Rest and serve: Turn off the slow cooker and let it sit for 10 minutes. Ladle into bowls, garnishing with fresh parsley if desired.

Notes

Do not lift the lid while dumplings are cooking—the steam is essential. For thicker broth, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into hot broth, cooking on HIGH for 10 minutes uncovered. Use room-temperature milk for dumplings to prevent butter from seizing. Thaw chicken before using to avoid watery broth.
