  • 4 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup heavy cream
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 cup whole milk (or buttermilk)
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep the vegetables: Dice carrots, celery, and onion into half-inch pieces. Mince the garlic.
  2. Layer the crockpot: Place chicken in the bottom of the slow cooker. Top with diced vegetables and minced garlic. Sprinkle poultry seasoning, thyme, rosemary, salt, and pepper over everything.
  3. Add the liquids: Pour chicken broth and cream of chicken soup over the chicken and vegetables. Stir gently. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is fork-tender.
  4. Shred the chicken: Remove chicken to a cutting board and shred with two forks. Return shredded chicken to the crockpot and stir in heavy cream. Adjust seasoning if needed.
  5. Make the dumpling batter: In a medium bowl, whisk together flour, baking powder, salt, and garlic powder. In a separate small bowl, whisk milk and melted butter. Pour wet ingredients into dry and stir until just combined (batter will be thick and slightly lumpy).
  6. Add the dumplings: Drop spoonfuls of batter onto the surface of the hot broth using a rounded tablespoon, spacing them about an inch apart. Do not push them into the liquid.
  7. Cook the dumplings: Cover the crockpot and cook on HIGH for 30-40 minutes. Do not lift the lid during this time. Dumplings are done when puffed up and a toothpick inserted in the center comes out clean.
  8. Serve: Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

Do not lift the lid while dumplings are cooking. Use room temperature ingredients for dumplings. Season broth generously. Shred chicken while warm. If dumplings are too thick, add a tablespoon more milk.
