  • 4 cups low-sodium beef broth
  • ½ cup dry sherry or white wine
  • 12 ounces wide egg noodles
  • 8 slices provolone cheese
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 45 sprigs fresh thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water

Instructions

  1. Season and Sear the Beef (10 minutes): Pat the beef chunks dry with paper towels. Season generously on all sides with salt and black pepper. Heat 1 tablespoon of olive oil in your large skillet over medium-high heat until it’s shimmering. Working in batches (don’t crowd the pan!), sear the beef for 2-3 minutes per side until a deep, brown crust forms. Transfer the seared beef to the slow cooker.
  2. Deglaze the Pan (2 minutes): Reduce the heat to medium. Pour the dry sherry or white wine into the hot skillet. Using a wooden spoon, scrape up all those browned bits stuck to the bottom. Let it bubble and reduce by half for about a minute. Pour this liquid over the beef in the slow cooker.
  3. Sauté the Onions (15 minutes): In the same skillet, melt the butter over medium heat. Add the sliced onions and a generous pinch of salt. Cook, stirring occasionally, for 12-15 minutes until they’re soft, translucent, and starting to turn golden brown. Add the minced garlic in the last 2 minutes and cook until fragrant.
  4. Build the Broth (5 minutes): Pour about ½ cup of the beef broth into the skillet with the onions and scrape up any remaining bits. Transfer the entire onion mixture to the slow cooker, on top of the beef. Add the remaining beef broth, fresh thyme sprigs, and bay leaves. Give everything a gentle stir.
  5. Slow Cook (6-8 hours on LOW or 3-4 hours on HIGH): Cover and cook. Low and slow is your friend here—it makes the beef impossibly tender.
  6. Cook the Noodles (10 minutes): About 15 minutes before serving, bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until al dente. Drain well and set aside.
  7. Thicken the Broth (2 minutes): Using tongs, remove the thyme sprigs and bay leaves from the slow cooker. In a small bowl, whisk the cornstarch and cold water together to form a slurry. Pour the slurry into the slow cooker and stir gently. Let it cook for 2-3 minutes on HIGH until the broth thickens to a gravy-like consistency.
  8. Shred the Beef (5 minutes): Using two forks, shred the beef chunks right in the slow cooker. They should fall apart with almost no effort. Stir the shredded beef back into the thickened broth.
  9. Combine and Assemble (5 minutes): Add the drained egg noodles to the slow cooker and gently fold them into the beef and broth until everything is well coated. Taste and adjust seasoning with more salt and pepper if needed.
  10. Broil for the Cheese Crust (3-5 minutes): Preheat your oven’s broiler. Ladle the beef and noodle mixture into oven-safe bowls. Top each bowl with a slice of provolone cheese and a generous sprinkle of shredded Gruyère. Place the bowls on a baking sheet and broil for 2-4 minutes, watching closely, until the cheese is bubbly and golden brown in spots. Serve immediately.
