Ingredients

Scale
  • 1 lb (450g) ground turkey (93% lean recommended)
  • 2 medium sweet potatoes (about 3 cups diced / 400g), peeled and cut into ½-inch cubes
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 14.5 oz (400g) canned diced tomatoes (fire-roasted preferred)
  • 8 oz (240ml) canned tomato sauce
  • 1 cup (240ml) low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt (plus more to taste)
  • ½ teaspoon freshly ground black pepper
  • 15 oz (425g) canned kidney beans, drained and rinsed
  • 1 tablespoon olive oil
  • For serving (optional): shredded cheddar cheese, sour cream or Greek yogurt, sliced avocado, fresh cilantro, lime wedges, tortilla chips

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until no longer pink (about 5-7 minutes).
  2. Add diced onion and minced garlic to the skillet. Cook for 2 minutes until onion softens and garlic is fragrant.
  3. While turkey cooks, add diced sweet potatoes, bell pepper, canned tomatoes, tomato sauce, and chicken broth to a 5-6 quart slow cooker. Stir to combine.
  4. Stir chili powder, cumin, smoked paprika, oregano, salt, and pepper into the turkey mixture. Cook for 30 seconds to bloom the spices. Transfer everything from the skillet to the slow cooker and stir well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours. About 30 minutes before serving, stir in the drained and rinsed kidney beans.
  6. Taste and adjust seasoning (more salt, cumin, or a squeeze of lime as desired). If chili is too thick, add extra broth; if too thin, cook uncovered for 15-20 minutes.
  7. Ladle into bowls and serve with desired toppings.

Notes

For best flavor, don’t skip browning the turkey and blooming the spices. Cut sweet potatoes into uniform ½-inch cubes for even cooking. Add beans near the end to prevent mushiness. Prep ingredients the night before for easy morning assembly. Resist opening the lid during cooking to maintain heat. Leftovers keep in the fridge for up to 5 days or freeze for up to 3 months.
