Ingredients

Scale
  • 8–10 fresh figs, halved
  • 1/3 cup honey, plus extra for drizzling
  • 8 oz brie cheese (double or triple cream)
  • 6 oz aged cheddar, sliced or cubed
  • 4 oz manchego, sliced into thin wedges
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami (fennel or Genoa), sliced
  • 1 cup mixed nuts (toasted almonds, pecans, walnuts)
  • 1 cup fresh grapes (red or green)
  • 1/2 cup dried apricots
  • 200 g assorted crackers and bread (water crackers, baguette slices, seeded crispbread)
  • Fresh rosemary sprigs and thyme for garnish
  • Optional: apple slices, pear slices, fig jam, olives

Instructions

  1. Prep Your Ingredients (10 minutes): Take brie and cheddar out of fridge 30 minutes before serving. Wash and halve figs, slice baguette into thin rounds, toast nuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Set aside.
  2. Arrange the Cheeses (5 minutes): Place brie wheel in center-left of board. Slice cheddar into thin triangles and fan out in a line. Cut manchego into small wedges and place opposite brie. Leave space between cheeses.
  3. Add the Meats (3 minutes): Fold prosciutto slices into loose ribbons and arrange in a small pile near edge of board. Fold salami slices in half twice so they stand up slightly.
  4. Place the Fruits and Nuts (5 minutes): Scatter halved figs around cheeses, tucking some under brie. Add small clusters of grapes and dried apricots in gaps. Sprinkle toasted nuts in little piles.
  5. Drizzle with Honey (2 minutes): Warm honey if too thick. Drizzle generously over brie and figs. Add a small bowl of extra honey on the side.
  6. Fill the Gaps with Crackers and Bread (3 minutes): Arrange crackers and bread slices around board, fanning them out. Place water crackers near brie and seeded crackers near cheddar.
  7. Garnish and Serve (2 minutes): Tuck fresh rosemary sprigs and thyme leaves around board. Serve immediately.

Notes

Let cheeses come to room temperature for best flavor. Toast nuts just before assembling for extra crunch. Use a good quality honey for best results. Prep all ingredients before arranging to work quickly.
