Ingredients

Scale
  • 200g (7 oz) wheel of brie cheese (double or triple cream)
  • 150g (5 oz) aged cheddar cheese
  • 100g (3.5 oz) blue cheese (optional, or substitute goat cheese)
  • 100g (3.5 oz) prosciutto, thinly sliced
  • 100g (3.5 oz) salami (Genoa or fennel-spiced)
  • 2 medium Honeycrisp apples
  • 2 medium Bartlett pears
  • 1 large pomegranate
  • 100g (3.5 oz) dried apricots
  • 4–6 fresh figs (optional, if in season)
  • 200g (7 oz) mixed crackers (water crackers, rosemary crackers, whole wheat)
  • 3 tbsp fig jam or honey
  • 100g (3.5 oz) toasted pecans
  • 50g (2 oz) dark chocolate (70% cocoa or higher)
  • Fresh rosemary sprigs (for garnish)
  • Edible flowers (optional, for garnish)

Instructions

  1. Take the cheeses out of the fridge 30 minutes before serving to come to room temperature.
  2. Preheat oven to 180°C / 350°F. Spread pecans on a baking sheet and toast for 5-7 minutes, shaking halfway through. Let cool completely.
  3. Wash apples, pears, and figs. Slice apples and pears into 1/4-inch thick slices (leave skin on). If prepping ahead, toss with lemon juice to prevent browning. Halve figs lengthwise. Deseed pomegranate by cutting in half and smacking the back with a wooden spoon over a bowl.
  4. If prosciutto isn’t pre-shaved, separate slices and roll into loose ribbons. Slice salami into thin rounds (about 1/8 inch thick).
  5. Spoon fig jam into a small bowl. If using honey, pour into another bowl. Place pomegranate seeds in a third bowl.
  6. Arrange cheeses on a large wooden board or platter (at least 12×16 inches). Place brie whole on one side, cheddar block opposite, and blue cheese in between.
  7. Drape prosciutto ribbons around the cheeses. Fan out salami slices in small clusters.
  8. Scatter apple and pear slices around the board, overlapping slightly. Place fig halves cut-side up. Tuck dried apricots in between.
  9. Arrange crackers in groups around the board. Sprinkle toasted pecans in gaps. Break dark chocolate into small pieces and scatter.
  10. Place small bowls of fig jam, honey, and pomegranate seeds in empty spaces. Tuck rosemary sprigs under cheeses. Add edible flowers if using.
  11. Step back and check for empty spots. Fill with extra crackers or nuts. Adjust for easy access to cheeses.

Notes

Let cheese come to room temperature for best texture. Slice apples and pears last minute to prevent browning. Don’t overcrowd the board—leave about 10-15% empty space. Toast nuts fresh for best flavor. Store leftovers separately: cheeses in wax paper, meats in airtight container, fruits in separate container, crackers and nuts at room temperature.
