Ingredients

Scale
  • 8 ounces dried black mission figs, stems removed
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh rosemary, finely chopped
  • Pinch of sea salt
  • 1 tablespoon lemon juice
  • 8 ounces aged sharp cheddar, sliced or in a block
  • 6 ounces creamy brie, at room temperature
  • 4 ounces gorgonzola dolce
  • 6 ounces prosciutto, thinly sliced
  • 4 ounces soppressata, sliced
  • 1 cup mixed olives (Castelvetrano and kalamata)
  • 1/2 cup dried apricots
  • 1/2 cup toasted almonds
  • 1/4 cup honey
  • 1 box of crackers (e.g., Rustic Bakery flatbread crackers or water crackers)
  • 1 baguette, sliced and lightly toasted (optional)
  • Fresh figs, halved (if in season)
  • Fresh rosemary sprigs (for decoration)

Instructions

  1. Remove tough stems from dried figs and roughly chop into quarters or eighths.
  2. In a medium saucepan, combine chopped figs, sugar, water, balsamic vinegar, and a pinch of sea salt. Stir together.
  3. Place saucepan over medium heat and bring to a gentle simmer, stirring occasionally (about 3-4 minutes).
  4. Reduce heat to low and cook for 15-20 minutes, stirring every few minutes, until the mixture thickens to a syrupy consistency.
  5. Remove from heat and stir in fresh rosemary and lemon juice. Let cool in the pan for 10 minutes.
  6. Transfer jam to a jar or container and let come to room temperature, then refrigerate. (Can be made up to 2 weeks ahead.)
  7. Take cheeses out of the fridge about 30 minutes before serving.
  8. Place large board or platter on counter. Put fig jam, honey, and olives in small ramekins and space them evenly on the board.
  9. Add cheeses: place brie whole or halved near one bowl, slice cheddar into thin wedges or cubes and arrange in a pile, place gorgonzola dolce in a small mound.
  10. Layer meats: fold prosciutto into loose ribbons or rosettes and arrange near one edge; lay soppressata slices flat, slightly overlapping.
  11. Fill gaps with crackers and bread, fanning them out in small groups around cheeses and meats.
  12. Scatter dried apricots and toasted almonds in small clusters.
  13. Garnish with fresh fig halves and rosemary sprigs.
  14. Drizzle honey over brie or gorgonzola just before serving.

Notes

The fig jam can be made up to two weeks ahead. For a vegan board, swap cheeses for plant-based alternatives and use maple syrup instead of honey. If figs are tough, soak in warm water for 10 minutes before using. Don’t overcook the jam; it should be jammy, not hard. Let cheeses come to room temperature for best flavor. Avoid overcrowding the board.
