A creamy, cozy pink drink made with coconut milk, berries, and hibiscus tea. This easy copycat recipe captures the perfect balance of tart and sweet, bringing back the memory of a favorite café drink.

Ingredients

Scale
  • 1 cup unsweetened coconut milk
  • 1/2 cup frozen strawberries
  • 1/4 cup frozen raspberries
  • 1 tablespoon honey or agave syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup brewed hibiscus tea, cooled
  • Ice cubes (optional, for a chilled version)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Brew the hibiscus tea: In a small saucepan, bring 1/2 cup of water to a boil. Add one hibiscus tea bag (or two for stronger flavor) and let steep for 5-7 minutes. Remove the tea bag and let the tea cool completely.
  2. Warm the coconut milk: In the same saucepan (rinsed), pour in the coconut milk. Warm over medium-low heat for 2-3 minutes, stirring occasionally, until warm but not boiling. For a cold version, skip this step and use cold coconut milk.
  3. Blend the berries: Add frozen strawberries and raspberries to a blender. Pour in the cooled hibiscus tea and vanilla extract. Blend on high for 30-45 seconds until completely smooth.
  4. Strain the mixture: Place a fine-mesh strainer over a bowl or serving glass. Pour the blended berry mixture through the strainer, using a spoon to press the liquid through. Discard the seeds.
  5. Combine and sweeten: Pour the strained berry mixture into the warm coconut milk. Add honey or agave syrup and stir gently until well combined. Taste and adjust sweetness if desired.
  6. Serve: Pour into a mug or glass. For a cold version, add ice cubes first. Garnish with fresh mint if desired. Enjoy immediately.

Notes

For a creamier texture, use canned coconut milk. Brew the hibiscus tea stronger than needed to prevent dilution from ice or warmth. The berry-hibiscus mixture can be stored in the fridge for up to 3 days. Do not freeze the drink as coconut milk may separate.
