These Maple Bourbon Pecan Pie Bars are the ultimate cozy dessert, combining rich maple syrup, warm bourbon, and toasted pecans in a buttery crust. Quick to make and perfect for fall gatherings or quiet evenings at home.

Ingredients

Scale
  • 1 ½ cups all-purpose flour (spooned and leveled)
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 2–3 tablespoons ice water
  • 1 ½ cups pecan halves
  • 3 large eggs, room temperature
  • ¾ cup pure maple syrup
  • ½ cup packed light brown sugar
  • ¼ cup unsalted butter, melted
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. Toast the pecans: Spread pecan halves on a baking sheet in a single layer. Bake for 6-8 minutes, stirring halfway, until fragrant and slightly darker. Let cool completely, then roughly chop.
  3. Make the crust: In a food processor, combine flour, sugar, and salt. Pulse to mix. Add cold cubed butter and pulse until mixture resembles coarse sand with some pea-sized butter bits. Add ice water 1 tablespoon at a time, pulsing until dough just comes together.
  4. Press the crust into the prepared pan evenly, about ½ inch up the sides. Prick bottom with a fork. Bake for 15 minutes until lightly golden. Set aside to cool slightly.
  5. Make the filling: In a large bowl, whisk eggs until frothy, about 30 seconds. Add maple syrup, brown sugar, melted butter, bourbon, vanilla, and salt. Whisk until completely combined and smooth.
  6. Assemble: Sprinkle toasted chopped pecans evenly over the warm crust. Pour filling over pecans, spreading evenly.
  7. Bake for 30-35 minutes until edges are set and center has a slight jiggle (like Jell-O). Cool completely in pan on a wire rack for at least 2 hours.
  8. Use parchment handles to lift the slab out. Cut into 16 squares with a sharp knife, wiping blade clean between cuts.

Notes

Toast pecans fresh for best flavor. Use real maple syrup, not pancake syrup. For bourbon-free version, substitute with 2 tablespoons apple cider + ½ teaspoon vanilla extract. Bars taste even better the next day. For clean cuts, chill bars for 30 minutes and use a hot, wet knife.
