This quick and easy side dish features tender delicata squash with a sweet and savory maple butter glaze, perfect for cozy nights or holiday tables. Ready in under 20 minutes with simple ingredients.

Ingredients

Scale
  • 2 medium delicata squash (about 1.5 lbs total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cinnamon (optional)
  • 2–3 fresh thyme sprigs (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle. Line a baking sheet with parchment paper if using.
  2. Wash the delicata squash well. Trim off the stem and the very bottom tip. Slice the squash in half lengthwise. Use a spoon to scoop out the seeds and stringy pulp.
  3. Place each half cut-side down on your cutting board. Slice crosswise into ½-inch thick half-moons.
  4. In a large bowl, combine the squash slices with olive oil, salt, pepper, and cinnamon (if using). Toss gently with your hands until every slice is coated. Spread them in a single layer on the prepared baking sheet.
  5. Roast for 10 minutes.
  6. While the squash roasts, make the maple butter glaze: In a small bowl, whisk together the melted butter and maple syrup until smooth.
  7. After 10 minutes, remove the baking sheet from the oven. Using a pastry brush, brush each slice generously with the maple butter mixture. Flip the slices over and brush the other side too.
  8. Return the sheet to the oven and roast for another 8-10 minutes, watching closely during the last few minutes to prevent burning.
  9. Check for doneness: The squash should be fork-tender and deeply golden. A knife should slide through easily with no resistance.
  10. Remove from the oven and let the squash sit on the baking sheet for 2 minutes. Transfer to a serving platter and garnish with fresh thyme sprigs if using. Serve warm.

Notes

Don’t skip the olive oil—it helps the squash get crispy. Slice evenly for uniform cooking. Watch the glaze closely as maple syrup can burn quickly. Use room temperature butter for easier mixing. Line your pan with parchment paper for easy cleanup. Let the first side get nicely golden before flipping and brushing with glaze.
