Cozy Nectarine Blueberry Galette with Honey Glaze

A quick and easy rustic galette featuring ripe nectarines and blueberries, topped with a warm honey glaze for a cozy, homemade dessert.

  • 23 ripe nectarines, sliced
  • 1 cup fresh blueberries (or frozen, thawed and drained)
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • ½ teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 pre-made pie crust (store-bought or homemade)
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter, melted
  • Optional: vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine sliced nectarines and blueberries. Add sugar, lemon juice, cinnamon, and cornstarch. Toss gently to coat evenly.
  3. Roll out the pie crust onto the lined baking sheet if store-bought, or roll homemade dough into a roughly 12-inch circle.
  4. Pile the fruit mixture in the center of the dough, leaving about a 2-inch border around the edges. Fold the edges of the dough over the fruit in pleats, pressing lightly to seal.
  5. Bake for 35-40 minutes until crust is golden brown and fruit is bubbly. Cover edges with foil halfway through baking if they brown too quickly.
  6. While baking, warm honey and melted butter together for about 20 seconds and stir to combine.
  7. Brush the honey glaze over the warm galette as soon as it comes out of the oven.
  8. Cool on a rack for 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

If dough cracks while folding, wet your fingers and gently press to seal. Use cornstarch to prevent soggy crust. Cover edges with foil halfway through baking to avoid burning. Honey glaze applies best when galette is warm. Frozen fruit can be used if thawed and drained.
