This cozy one-bowl apple crisp with oat crumble is a warm, comforting dessert featuring tender, spiced apples and a crispy, buttery oat topping. It’s simple enough for a weeknight but impressive enough for a holiday table.

Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 6 cups)
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice your apples into even pieces—about 1/4-inch thick.
  3. In your large mixing bowl, combine the sliced apples with the granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, and salt. Toss everything together until the apples are evenly coated. Let this sit for 15-20 minutes.
  4. While the apples macerate, make the crumble topping: In the same bowl, combine the oats, flour, brown sugar, cinnamon, and salt for the topping. Whisk them together until evenly mixed.
  5. Add the cold butter: Drop the cold butter cubes into the dry ingredients. Using a pastry cutter or two forks, cut the butter into the flour mixture until it resembles coarse meal with some pea-sized butter pieces remaining.
  6. Toast the oats (optional but recommended): Spread the crumble mixture on a baking sheet and toast in the preheated oven for 5-7 minutes, until lightly golden and fragrant. Let the crumble cool slightly.
  7. Assemble the crisp: Transfer the macerated apples (including all the juices) into your greased baking dish. Spread them into an even layer. Sprinkle the oat crumble evenly over the top. Don’t press it down.
  8. Bake: Place the baking dish on a baking sheet and bake for 40-45 minutes, until the topping is golden brown and the filling is bubbling around the edges. If the topping is browning too quickly, tent the dish loosely with foil for the last 10 minutes.
  9. Cool slightly before serving: Let the crisp sit on a wire rack for at least 15-20 minutes before serving.

Notes

For best results, use a mix of tart and sweet apples (e.g., Granny Smith and Honeycrisp). Toasting the oats is optional but highly recommended for extra crunch. Let the crisp rest for at least 15 minutes before serving to allow the filling to set. Store leftovers covered in the refrigerator for up to 5 days.
