Ingredients

Scale
  • 1 ¾ cups (210g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 cup (240g) pumpkin puree
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) milk
  • 4 oz (113g) cream cheese, softened
  • 2 tablespoons (25g) granulated sugar
  • 1 large egg yolk, at room temperature
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the sides. Alternatively, grease the pan with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until evenly combined.
  3. Make a well in the center of the dry ingredients. Add the pumpkin puree, vegetable oil, eggs, vanilla extract, and milk. Stir with a whisk or spatula until just combined. Do not overmix; a few lumps are fine.
  4. In a small bowl, beat the softened cream cheese with 2 tablespoons of granulated sugar, the egg yolk, and ½ teaspoon of vanilla extract until smooth and creamy.
  5. Pour the pumpkin batter into the prepared loaf pan and spread it evenly.
  6. Drop spoonfuls of the cream cheese mixture over the batter in 5-6 spots.
  7. Use a toothpick, skewer, or butter knife to gently swirl the cream cheese into the batter in a figure-eight pattern. Make only 4-5 passes to create distinct ribbons.
  8. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil after 40 minutes.
  9. Let the bread cool in the pan for 15 minutes. Then use the parchment overhang to lift it out and transfer to a wire rack to cool completely before slicing.

Notes

For best results, use room temperature ingredients. Do not overmix the batter to avoid a tough texture. Let the bread cool completely before slicing to prevent crumbling. If the cream cheese swirl sinks, ensure the cream cheese is softened but not runny and avoid over-swirling. The bread tastes even better the next day as flavors meld.
