Ingredients

Scale
  • 4 bone-in pork chops, about 1-inch thick
  • 4 tablespoons unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 cup chicken broth, low-sodium
  • 1 tablespoon fresh parsley, chopped for garnish (optional)
  • 1 tablespoon olive oil

Instructions

  1. Remove pork chops from refrigerator 15-20 minutes before cooking. Pat dry with paper towels.
  2. In a small bowl, mix salt, black pepper, paprika, and dried thyme. Sprinkle evenly over both sides of pork chops and rub in gently. Let sit for 5 minutes.
  3. Peel and finely mince garlic cloves. Set aside.
  4. Place a large skillet over medium-high heat and add olive oil. Heat until oil shimmers and first wisp of smoke appears, about 2 minutes.
  5. Carefully place seasoned pork chops in hot pan. Cook for 4-5 minutes without moving, until deep golden-brown crust forms.
  6. Flip pork chops using tongs. Add 2 tablespoons butter to pan, letting it melt around chops. Cook for another 3-4 minutes.
  7. Push pork chops to one side of pan. Add minced garlic to empty space and cook for 30 seconds, stirring constantly, until fragrant and just starting to turn golden. Stir into butter.
  8. Tilt pan slightly and spoon garlic butter over pork chops for about 1 minute.
  9. Check doneness with a meat thermometer inserted into thickest part (avoid bone). Target temperature is 145°F (63°C).
  10. Transfer pork chops to a cutting board and tent loosely with foil. Rest for 5 minutes.
  11. While pork rests, return pan to medium heat. Add remaining 2 tablespoons butter and chicken broth. Use a wooden spoon to scrape up browned bits from pan bottom. Simmer for 2-3 minutes until sauce thickens slightly.
  12. Place rested pork chops on plates or a serving platter. Pour pan sauce over top. Garnish with fresh parsley if desired. Serve immediately.

Notes

For best results, use 1-inch thick bone-in pork chops. Don’t overcrowd the pan; cook in batches if needed. Garlic burns quickly, so keep it moving. Let pork rest for 5 minutes before slicing to retain juices. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium-low heat with a splash of broth.
