This cozy overnight crockpot chicken breast recipe delivers impossibly tender, juicy shredded chicken with minimal effort. Simply season, set, and let the slow cooker work its magic while you sleep for a versatile, protein-packed meal prep staple.

Ingredients

Scale
  • 2–3 lbs (900g-1.4kg) boneless, skinless chicken breasts
  • 1 cup (240ml) low-sodium chicken broth
  • 1 tablespoon (15ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly cracked black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts on a cutting board, pat dry with paper towels, and trim excess fat. Arrange in a single layer in the bottom of a 6-quart or larger slow cooker.
  2. In a small bowl, combine onion powder, dried thyme, dried rosemary, salt, and black pepper. Stir to evenly distribute.
  3. Sprinkle the seasoning mixture evenly over all sides of the chicken breasts, rubbing it in with your hands.
  4. Scatter the minced garlic over the seasoned chicken.
  5. Drizzle olive oil over the chicken. Pour chicken broth around the chicken (not directly over it) so the liquid comes about a quarter to a third of the way up the sides.
  6. Secure the lid on the slow cooker. Set to LOW heat. Do not use HIGH.
  7. Cook on LOW for 6 to 8 hours, until the internal temperature reaches 165°F (74°C) and the chicken shreds easily with a fork.
  8. Carefully remove chicken from the slow cooker using tongs. Shred with two forks. Return shredded chicken to the pot to soak up juices before serving. Garnish with fresh parsley if desired.

Notes

Do not lift the lid during cooking to avoid heat loss. Use LOW heat only for overnight cooking; HIGH will result in dry chicken. For best results, use chicken breasts of similar size and a meat thermometer to ensure 165°F internal temperature. The leftover cooking liquid is a flavorful broth that can be used for soups or cooking grains.
