Creamy, protein-packed overnight oats with warm fall spices and peanut butter. A quick, make-ahead breakfast that tastes like comfort and fuels your morning.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) unsweetened almond milk
  • 2 tablespoons (32g) creamy natural peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (15ml) pure maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15g) chia seeds
  • Pinch of sea salt
  • Optional toppings: sliced banana, chopped peanuts, extra peanut butter drizzle, fresh berries, granola

Instructions

  1. In a small mixing bowl, whisk together almond milk, peanut butter, maple syrup, and vanilla protein powder until smooth and fully combined.
  2. Stir in cinnamon, nutmeg, and a pinch of sea salt.
  3. Add rolled oats and chia seeds to a mason jar or container with a lid.
  4. Pour the peanut butter mixture over the oats. Do not stir yet; let it settle for about 30 seconds.
  5. Gently fold the oats into the liquid until every oat is coated.
  6. Seal the jar and refrigerate overnight, or for at least 6-8 hours.
  7. In the morning, stir the oats. If too thick, add a splash of milk. Add desired toppings and enjoy cold or microwave for 60-90 seconds for warm oats.

Notes

Warm peanut butter slightly before mixing for smoother blending. Do not oversoak beyond 24 hours. Rolled oats are essential; quick oats become mushy and steel-cut oats won’t soften enough. The oats taste even better on the second day as flavors meld.
