Cozy Poor Mans Beef and Potato Stew: Easy Budget Dinner

A hearty, budget-friendly beef and potato stew that simmers low and slow until the beef is fork-tender and the potatoes melt into a silky broth. Perfect for cold evenings when you need a comforting, one-pot meal that feels like a hug in a bowl.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons vegetable oil, divided
  • 1 large yellow onion, diced (about 2 cups)
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 medium Yukon Gold potatoes, peeled and cut into 1-inch chunks (about 2 pounds)
  • 3 large carrots, peeled and sliced into ½-inch rounds
  • 3 celery stalks, sliced into ½-inch pieces
  • 1 cup frozen peas
  • Fresh parsley, chopped (optional garnish)
  • Crusty bread, for serving (optional)

Instructions

  1. Pat the beef dry with paper towels. Season generously with salt and pepper on all sides.
  2. Heat 2 tablespoons of oil in a Dutch oven over medium-high heat until shimmering. Add the beef in a single layer (work in batches if needed) and brown undisturbed for 3-4 minutes per side, until a deep, dark crust forms. Remove browned beef to a plate and set aside.
  3. Reduce heat to medium and add the remaining 1 tablespoon of oil. Add the diced onion and cook for 5-6 minutes, stirring occasionally, until softened and starting to turn golden. Scrape up any browned bits from the bottom of the pot.
  4. Add the minced garlic and cook for 30 seconds until fragrant. Stir in the tomato paste and cook for 2 minutes, stirring constantly.
  5. Pour in about ½ cup of the beef broth and scrape the bottom of the pot to release any stuck-on bits (deglazing).
  6. Return the beef to the pot along with any accumulated juices. Add the remaining broth, water, bay leaves, dried thyme, and smoked paprika. Stir everything together.
  7. Bring the stew to a gentle boil, then reduce the heat to low. Cover the pot with the lid slightly ajar and let it simmer for 1 hour.
  8. After 1 hour, add the potatoes, carrots, and celery. Stir gently, making sure the vegetables are submerged. Cover again and continue simmering for another 45 minutes to 1 hour, until the beef is fork-tender and the potatoes are soft but not falling apart.
  9. Remove the bay leaves and discard. Stir in the frozen peas and cook for 2-3 minutes until heated through. Taste and adjust seasoning with more salt and pepper if needed.
  10. Let the stew rest for 10 minutes off the heat before serving. Serve hot with crusty bread and a sprinkle of fresh parsley, if desired.

Notes

Don’t skip browning the beef—it creates a deep flavor base. Cut vegetables to uniform 1-inch chunks for even cooking. For a thicker broth, mash a few cooked potatoes against the side of the pot and stir them in. The stew tastes even better the next day.
