These soft, tender sugar cookies are infused with warm pumpkin pie spice and topped with a simple vanilla icing. They taste like autumn in every bite and are perfect for fall gatherings, Thanksgiving desserts, or cozy afternoons.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour (spooned and leveled)
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups powdered sugar, sifted
  • 2–3 tablespoons whole milk
  • ½ teaspoon vanilla extract
  • Pinch of pumpkin pie spice for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Scrape down the sides halfway through.
  3. Beat in the egg until fully combined, then add the vanilla extract.
  4. In a separate bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Using a cookie scoop or spoon, portion out rounded tablespoons of dough and place them about 2 inches apart on the prepared baking sheets. Do not flatten.
  7. Bake for 10-12 minutes, until the edges are set and just barely golden, while the centers still look slightly soft and puffy.
  8. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While the cookies cool, whisk together the sifted powdered sugar, 2 tablespoons of milk, and vanilla extract until thick but pourable. Add more milk if needed.
  10. Once the cookies are completely cool, drizzle or spread the icing over each one. Sprinkle a tiny pinch of pumpkin pie spice on top while the icing is still wet.
  11. Let the icing set for 20-30 minutes before serving or stacking.

Notes

For best results, use room temperature ingredients. Do not overbake; cookies will continue to set as they cool. For a dairy-free version, use vegan butter and oat or almond milk. For gluten-free, substitute with a 1:1 gluten-free flour blend. Cookies can be stored in an airtight container at room temperature for up to 5 days. Un-iced cookies can be frozen for up to 3 months.
