A comforting and easy sheet pan recipe for juicy cheeseburger sliders with caramelized onions and a tangy special sauce, perfect for gatherings or quick weeknight meals.

  • 1.5 pounds ground beef (80/20 blend)
  • 12 small slider buns (brioche or potato rolls recommended)
  • 6 ounces sharp cheddar cheese, sliced thinly
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil or butter (for sautéing onions)
  • Special Sauce:
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • Pinch of smoked paprika
  • Salt and pepper to taste
  • Pickle slices (optional)
  • Salt and pepper (to season beef and onions)
  • 1 teaspoon garlic powder
  • 2 tablespoons melted butter (for brushing buns)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper or lightly grease it.
  2. Toss sliced onions with 2 tablespoons olive oil or melted butter and a pinch of salt. Spread evenly on one side of the sheet pan. Bake for about 15 minutes to begin caramelizing.
  3. In a large bowl, combine ground beef with garlic powder, salt (about 1 teaspoon), and pepper (about ½ teaspoon). Mix gently until just combined.
  4. Divide beef into 12 equal portions (about 1.3 ounces / 37 g each) and shape into small, flat patties slightly larger than the slider buns.
  5. Remove sheet pan from oven after 15 minutes. Push onions to one side and place beef patties on the other side. Return to oven and bake for 10 minutes.
  6. Remove pan, layer a slice of cheddar cheese on each patty, then place tops of slider buns over patties. Brush buns lightly with melted butter.
  7. Return pan to oven and bake for another 5-7 minutes until cheese is melted and buns are toasted.
  8. While sliders bake, whisk together mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, apple cider vinegar, smoked paprika, and salt and pepper to taste to make the special sauce.
  9. Remove sliders from pan. Spoon caramelized onions over each patty, add a generous dollop of special sauce, and top with a pickle slice if desired.
  10. Serve warm and enjoy.

Notes

Do not overmix the beef to keep patties tender. Shape patties slightly larger than buns as they shrink during cooking. Brush buns with melted butter before baking to prevent sogginess and achieve a golden crust. Stir onions halfway through caramelizing if browning unevenly. The special sauce can be made ahead and stored in the fridge for up to a week. Leftovers reheat well in the oven; avoid microwaving to keep buns from getting soggy.
