  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • Salt and black pepper to taste
  • ⅓ cup sharp cheddar cheese, freshly grated
  • 1 tbsp Parmesan cheese, optional
  • Chopped fresh parsley or chives (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together 1 tablespoon softened butter and 1 tablespoon all-purpose flour until smooth.
  3. Slowly add ¼ cup evaporated milk, whisking constantly to avoid lumps.
  4. Season with ½ teaspoon onion powder, ¼ teaspoon garlic powder, salt, and pepper to taste.
  5. Fold in 4 oz cooked shredded chicken and ½ cup mixed vegetables until evenly coated.
  6. Spoon the mixture into a greased ramekin or ovenproof dish, leaving room at the top.
  7. Sprinkle ⅓ cup shredded sharp cheddar cheese evenly over the surface; add 1 tablespoon grated Parmesan if using.
  8. Place the ramekin on a baking sheet and bake for 20–25 minutes until bubbly and cheese crust is golden and crispy.
  9. Let the casserole rest for 5 minutes before serving.
  10. Garnish with chopped parsley or chives and a pinch of red pepper flakes if desired.

Notes

Use freshly grated sharp cheddar cheese for best melting and crust formation. If cheese browns too quickly, tent with foil. Let casserole rest before serving to set filling. Frozen mixed vegetables can be used without thawing. For dairy-free, substitute milk and cheese with plant-based alternatives. For gluten-free, use gluten-free flour or thicken with cornstarch or xanthan gum.
