Ingredients

Scale
  • 1 can (15 oz / 425 g) pumpkin puree
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (60 ml) vegetable oil or melted butter
  • 2 large eggs, room temperature
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (50 g) granulated sugar
  • 1/2 tsp ground cinnamon
  • 1 large egg yolk
  • 1 box (15.25 oz / 432 g) yellow or spice cake mix
  • 1/2 cup (120 ml) unsalted butter, melted

Instructions

  1. In a medium bowl, combine pumpkin puree, granulated sugar, vegetable oil, eggs, cinnamon, nutmeg, cloves, salt, and vanilla extract. Whisk until smooth, about 3-5 minutes.
  2. In a separate bowl, beat softened cream cheese with sugar, cinnamon, and egg yolk until smooth and creamy.
  3. Spray slow cooker insert with cooking spray or use a liner. Pour pumpkin mixture evenly into the bottom.
  4. Dollop spoonfuls of cream cheese mixture on top of pumpkin in several places. Gently swirl with a butter knife or skewer to create ribbons without overmixing.
  5. Sprinkle dry cake mix evenly over the pumpkin and cream cheese layers.
  6. Pour melted butter evenly over the cake mix topping.
  7. Cover and cook on low for 3 to 4 hours. Check at 3 hours for doneness; topping should be set and golden brown, center no longer jiggly.
  8. Let cake cool for 15-20 minutes before serving.

Notes

Soften cream cheese well before mixing to avoid lumps. Do not over-swirl the cream cheese into the pumpkin to maintain a marbled effect. Check cake at 3 hours to avoid overcooking. Pour melted butter evenly over cake mix to ensure a crisp topping. Use a slow cooker liner for easier cleanup.
