Creamy Baked Feta Pasta with Cherry Tomatoes

A quick and easy 5-ingredient pasta dish featuring roasted feta and cherry tomatoes that create a creamy, tangy sauce perfect for weeknight dinners.

  • 2 cups (about 300g) cherry tomatoes
  • 1 block (8 ounces / 225g) feta cheese
  • 8 ounces (225g) pasta (penne, fusilli, or spaghetti)
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, thinly sliced
  • Salt and black pepper, to taste
  • Fresh basil (a handful, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the cherry tomatoes in a medium-sized oven-safe baking dish.
  3. Scatter the sliced garlic evenly over the tomatoes.
  4. Place the block of feta in the center of the tomatoes.
  5. Drizzle everything with 3 tablespoons of olive oil.
  6. Season lightly with black pepper; avoid adding much salt as feta is salty.
  7. Bake uncovered for 30-35 minutes until tomatoes are blistered and feta is golden and soft around the edges.
  8. While baking, cook pasta in salted boiling water according to package instructions (8-10 minutes). Drain, reserving ½ cup of pasta water.
  9. Remove the baking dish from the oven and mash the tomatoes, garlic, and feta together to create a creamy sauce. Add reserved pasta water if needed to loosen the sauce.
  10. Toss the cooked pasta into the sauce and mix well to coat.
  11. Finish by stirring in fresh basil before serving.

Notes

If feta isn’t melting enough, gently mash it before baking next time. Save pasta water to loosen sauce if needed. Avoid overcrowding tomatoes to ensure roasting instead of steaming. Thinly slice garlic for even roasting and flavor infusion. Leftovers taste better the next day and can be reheated with a splash of water or olive oil.
