  • 1/3 cup unsweetened cocoa powder (35 g)
  • 3 tablespoons all-purpose flour (24 g)
  • 1/4 teaspoon salt
  • 2 1/2 cups whole milk (600 ml)
  • 3 large egg yolks, room temperature
  • 2 tablespoons unsalted butter, softened (28 g)
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened (115 g)
  • 15 whole Oreos, crushed finely
  • Optional garnishes: mini chocolate chips or chocolate shavings, whipped cream

Instructions

  1. In a medium bowl, whisk together sugar, cocoa powder, flour, and salt to create the dry mix.
  2. Pour whole milk into a medium saucepan and warm over medium heat until hot but not boiling (about 150°F / 65°C).
  3. Beat egg yolks lightly in a separate bowl. Slowly add about 1 cup of the hot milk into the yolks while whisking constantly to temper.
  4. Pour the tempered egg yolk mixture back into the saucepan with the remaining milk and dry ingredients. Cook over medium-low heat, whisking constantly, until thickened enough to coat the back of a spoon (about 8-10 minutes).
  5. Remove from heat and stir in softened butter and vanilla extract until melted and smooth. Let cool slightly.
  6. Beat softened cream cheese until smooth. Gradually add about half a cup of the warm pudding to the cream cheese, mixing well. Fold this mixture back into the rest of the pudding for a velvety texture.
  7. Cover pudding with plastic wrap pressed directly on the surface and refrigerate for at least 1 hour or until fully chilled.
  8. Crush Oreos into fine crumbs using a zip-top bag and rolling pin or food processor.
  9. Assemble pudding cups by spooning a layer of pudding into individual cups, topping with Oreo crumbs, repeating layers if desired, and finishing with a final Oreo topping and optional garnishes.

Notes

If pudding is too thick after chilling, whisk in a splash of milk before assembling. Temper egg yolks slowly to avoid curdling. Crush Oreos to a mix of fine crumbs and small chunks for texture contrast. For gluten-free, substitute flour with gluten-free blend; for dairy-free, use coconut milk and dairy-free cream cheese.
