  • Freshly ground black pepper to taste

Instructions

  1. Peel and cut potatoes into evenly sized chunks (about 1.5-inch pieces). Place in a large pot and cover with cold water by about an inch. Add a pinch of salt.
  2. Bring water to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes until potatoes are fork-tender but not falling apart.
  3. Drain potatoes thoroughly and return to the hot pot. Place over low heat for 1-2 minutes, gently shaking the pot to dry excess moisture.
  4. Melt butter in a small skillet over medium heat, stirring frequently until it foams and browns (about 4-5 minutes). Remove from heat and add garlic cloves, cooking gently for 1-2 minutes until fragrant and soft.
  5. Mash potatoes using a potato masher or ricer until smooth but still fluffy. Avoid overmixing.
  6. Add the browned butter and garlic mixture to the potatoes and stir gently to combine.
  7. Stir in warm whole milk and sour cream. Adjust amounts for desired creaminess.
  8. Season with salt and freshly ground black pepper to taste.
  9. Taste and adjust seasoning or butter as needed.
  10. Garnish with finely chopped fresh chives or parsley and serve warm.
