This creamy game-day buffalo chicken dip with ranch drizzle is fast, forgiving, and always gets devoured. It’s perfect for crowded living rooms, paper plates, and people who don’t want to stop watching the play to eat.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 1/2 cup buffalo hot sauce (Frank’s RedHot recommended)
  • 1/2 cup ranch dressing, store-bought or homemade
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup sour cream
  • 1/4 cup buttermilk (or regular milk with a splash of lemon juice)
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of salt

Instructions

  1. Soften the cream cheese by taking it out of the fridge about 30 minutes before starting. If forgotten, microwave in 10-second bursts until soft but not melted.
  2. Shred the chicken using two forks. If using rotisserie chicken, pull meat off bones and shred. Warm slightly in microwave if cold.
  3. Make the ranch drizzle: In a small bowl, whisk together sour cream, buttermilk, dried dill, dried parsley, garlic powder, onion powder, and a pinch of salt. Set aside.
  4. Place a skillet over medium-low heat. Add softened cream cheese and let it melt slowly, stirring occasionally, until smooth and creamy (about 3-4 minutes).
  5. Pour in buffalo hot sauce and 1/2 cup ranch dressing. Stir until fully combined and smooth (about 2 minutes).
  6. Stir in shredded chicken, garlic powder, onion powder, and a pinch of salt and pepper. Cook for 2-3 minutes.
  7. Reserve about 1/4 cup of cheddar for the top. Add remaining cheddar, mozzarella, and crumbled blue cheese (if using) to the skillet. Stir gently until cheese melts (about 3 minutes).
  8. Sprinkle reserved cheddar on top, cover skillet with a lid, and cook for 2 more minutes until cheese on top melts. Optionally, broil for 1-2 minutes for a browned top.
  9. Remove from heat. Drizzle ranch dressing over the top in a zigzag pattern. Let sit for about 5 minutes before serving.

Notes

Low and slow is key—don’t rush the cream cheese melting. Shred your own cheese for smoother melting. Let the dip rest 5 minutes before serving. For parties, transfer to a small slow cooker on warm setting. If dip looks oily, heat was too high. If too thick, stir in a splash of milk or extra ranch. If too thin, cook uncovered a few more minutes.
