  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • 8 oz (225 g) cremini or white button mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth
  • 1 tsp Dijon mustard
  • 1/4 cup (60 ml) dry white wine (optional)
  • 1 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and freshly cracked black pepper. Set aside.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chopped onions and sauté for 3-4 minutes until translucent and fragrant.
  3. Add sliced mushrooms to the skillet and cook, stirring occasionally, for 8-10 minutes until they release moisture and begin to brown. Season lightly with salt.
  4. Stir in minced garlic and fresh thyme; cook for another minute until fragrant, being careful not to burn the garlic.
  5. Push mushrooms and onions to the side of the skillet. Add chicken breasts and sear each side for 4-5 minutes until golden brown but not fully cooked through.
  6. Pour in white wine (or extra broth if skipping wine) and scrape up browned bits from the pan. Allow wine to reduce by half, about 2-3 minutes.
  7. Stir in chicken broth, heavy cream, and Dijon mustard. Mix gently and bring to a low simmer.
  8. Reduce heat to medium-low, cover loosely, and simmer for 8-10 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
  9. Remove lid, stir sauce gently, and let thicken for 2 minutes if needed. Adjust seasoning with salt and pepper.
  10. Sprinkle freshly chopped parsley over the top before serving.

Notes

Pat chicken dry before searing to get a golden crust. Take time to caramelize mushrooms slowly to avoid watery sauce. Use fresh herbs for best flavor. White wine is optional; substitute with broth and a splash of lemon juice if avoiding alcohol. Simmer gently after adding cream to prevent curdling. To thicken sauce, whisk in cornstarch dissolved in cold water and simmer briefly.
