Instructions

  1. Slice chicken breasts in half horizontally to create four thin cutlets. Season both sides with salt, pepper, garlic powder, and paprika. Let sit for 5 minutes.
  2. Heat a large skillet over medium-high heat and add olive oil. Once shimmering, place chicken cutlets in the pan (work in batches if needed). Cook for 4-5 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the same skillet and scrape up brown bits. Add minced garlic and cook for 30-45 seconds, stirring constantly, until fragrant.
  4. Pour in chicken broth and bring to a gentle simmer. Cook for 2 minutes. Slowly stir in heavy cream, dried thyme, and red pepper flakes (if using). Simmer for 3-4 minutes until sauce thickens slightly.
  5. Add broken pasta and 2 cups of water to the sauce. Stir to combine, ensuring pasta is mostly submerged. Bring to a gentle boil, then reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring every 3-4 minutes.
  6. Once pasta is al dente, remove lid. Stir in grated Parmesan cheese until melted. Slice cooked chicken into strips and nestle into the skillet. Warm through for 1-2 minutes.
  7. Taste and adjust salt and pepper. Garnish with fresh parsley and extra Parmesan. Serve immediately.
