  • 1/2 cup full-fat sour cream
  • 4 oz cream cheese, softened
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil (for tossing potatoes)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Toss chopped potatoes with a light drizzle of olive oil and a pinch of salt. Spread in a single layer on the baking sheet.
  3. Bake potatoes for 25-30 minutes, flipping halfway through, until tender but still holding shape.
  4. While potatoes bake, cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Drain and crumble once cooled.
  5. In a medium bowl, whisk together mayonnaise, sour cream, softened cream cheese, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth and creamy.
  6. Once potatoes have cooled slightly (warm is okay), transfer to a large serving bowl. Add crumbled bacon, shredded cheddar, and sliced green onions.
  7. Pour dressing over potato mixture and gently fold to coat without smashing the potatoes. Taste and adjust seasoning if needed.
  8. Chill potato salad for at least 30 minutes before serving to let flavors meld. For best flavor, chill up to 4 hours.
