  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup chicken broth (low-sodium recommended)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil or parsley, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt, pepper, and 1 teaspoon Italian seasoning. (5 minutes)
  2. Heat olive oil and butter in a large skillet over medium-high heat. When butter melts and oil shimmers, add chicken breasts. Cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside tented with foil. (12 minutes)
  3. Lower heat to medium. Add minced garlic to the pan and sauté for 30 seconds until fragrant but not burnt. Add chopped sun-dried tomatoes and cook for 1-2 minutes to warm through. (3 minutes)
  4. Pour in chicken broth and bring to a gentle simmer, scraping up browned bits from the pan. Let reduce slightly for 3 minutes. (4 minutes)
  5. Stir in heavy cream and Parmesan cheese. Add red pepper flakes if using, and adjust salt and pepper to taste. Stir continuously until sauce thickens and cheese melts smoothly, about 4-5 minutes. (5 minutes)
  6. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over them, and simmer on low for 3-4 minutes to meld flavors and keep chicken juicy. (4 minutes)

Notes

If sauce gets too thick, stir in a splash more chicken broth or cream to loosen. Do not overcrowd the pan when searing chicken to ensure a golden crust. Use freshly grated Parmesan for best sauce texture. Simmer sauce to reduce broth and thicken without extra thickeners. For dairy-free, substitute heavy cream with canned coconut milk and Parmesan with nutritional yeast. Chicken thighs can be used but require longer cooking time.
