Creamy Marry Me Chicken with Sun-Dried Tomato Sauce

A quick and easy chicken recipe featuring tender chicken breasts in a creamy, flavorful sun-dried tomato sauce. Perfect for busy weeknights or impressing guests with minimal effort.

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (about 50 g), packed in oil or rehydrated if dry-packed
  • 1/2 cup chicken broth (120 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/4 cup freshly grated Parmesan cheese (25 g)
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • Small handful fresh basil or parsley, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper. (About 5 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and tent with foil to keep warm. (About 12 minutes)
  3. Reduce heat to medium. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Stir frequently and cook until fragrant and softened, about 1-2 minutes. Watch garlic carefully to avoid burning. (2 minutes)
  4. Pour in chicken broth, scraping up browned bits from the pan. Let simmer about 3 minutes to reduce slightly.
  5. Lower heat to medium-low. Stir in heavy cream and grated Parmesan cheese. Mix until cheese melts and sauce thickens slightly, about 3-4 minutes. Sauce should coat the back of a spoon. Add Italian seasoning and red pepper flakes if using. (4 minutes)
  6. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over chicken and simmer gently for 2-3 minutes to meld flavors and heat through.
  7. Just before serving, sprinkle chopped fresh basil or parsley over the dish.

Notes

Do not overcrowd the pan when searing chicken to get a nice crust. Use room temperature chicken for even cooking. Watch garlic carefully to avoid burning. Simmer sauce gently after adding cream to prevent curdling. Rest chicken after searing to keep it juicy. If sauce is too thick, add a splash of broth or cream; if too thin, simmer uncovered longer or add a cornstarch slurry.
