These creamy no-bake pumpkin pie cheesecake bars offer a perfect balance of spiced pumpkin, smooth cheesecake, and a buttery graham cracker crust, making them an easy and comforting fall dessert.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (about 10 full sheets), finely crushed
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 cup canned pumpkin puree
  • ¾ cup sweetened condensed milk
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold

Instructions

  1. Line a 9×9-inch pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until mixture resembles wet sand and holds together when pressed.
  3. Press crust mixture firmly into the bottom of the pan in an even layer. Refrigerate for about 15 minutes.
  4. In another bowl, whisk together pumpkin puree, sweetened condensed milk, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour pumpkin mixture over chilled crust and spread evenly. Refrigerate for at least 20 minutes to set slightly.
  6. Using an electric mixer, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  7. In a separate chilled bowl, whip cold heavy cream until stiff peaks form.
  8. Gently fold whipped cream into cream cheese mixture until fully combined and fluffy.
  9. Spread cheesecake topping evenly over pumpkin layer and smooth the surface.
  10. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  11. Use parchment overhang to lift bars from pan. Cut into 12 squares and serve chilled or at room temperature.

Notes

Softening cream cheese before mixing is crucial to avoid lumps. Use cold cream and a chilled bowl for whipping cream to achieve stiff peaks. Press crust firmly to prevent crumbling and chill each layer well for clean slicing. Bars taste better after chilling overnight. For dairy-free or gluten-free versions, substitute ingredients as suggested.
